Method
If you're looking for a comforting, home-style winter stew that cooks slowly and fills your house with the aroma of home, this ontrib casserole will win over your heart and stomach. Perfect for Friday night, holidays, or just when you're craving mom's cooking.
Ingredients:
- 1 kg beef chuck, cut into cubes
- 2 large carrots, peeled and roughly chopped
- 10 small potatoes or 4 medium potatoes, roughly chopped
- 1 large onion, chopped
- 4 garlic cloves, sliced
- 2 tablespoons tomato paste
- 1 tablespoon sweet paprika
- 1 teaspoon cumin
- 2 tablespoons flour (optional – for thickening)
- Salt and pepper to taste
- 2 cups water/beef stock
- 3 tablespoons oil (for frying)
- 2 sprigs of thyme or rosemary (optional)
How to prepare:
Browning the meat:
- Heat a wide pot with oil.
- Fry the meat cubes on all sides until browned. Remove to a bowl and set aside.
Frying the vegetable base:
- In the same pot, sauté the onion until translucent.
- Add garlic, tomato paste, paprika, and cumin—stir well for 2 minutes.
Combining all the ingredients:
- Return the meat to the pot, add carrots and potatoes.
- Season with salt and pepper.
- Add water/broth until the meat and vegetables are covered.
- Add thyme/rosemary.
Cooking:
- Bring to a boil, cover, and reduce heat to low.
- Cook for 2–2.5 hours until the meat is very tender.
- You can thicken it with a tablespoon of flour mixed with a tablespoon of cold water and stir it in.
Serving:
- Serve hot with the vegetables and sauce on top.
